Ingredients
- All-purpose flour – 250 g
- Baking powder – 1 teaspoon
- Cinnamon – 0.5 teaspoon
- Powdered sugar – 1 tablespoon
- Salt – a pinch
- Egg – 1
- Milk – 300 ml
- Pumpkin puree – 120 g
- Olive oil – 1 tablespoon
- Butter – 6 tablespoons
Preparation
In a bowl, beat the egg and add milk, pumpkin puree, and olive oil. Mix everything thoroughly. In a separate bowl, mix together flour, powdered sugar, baking powder, cinnamon, and salt. Add the mixed dry ingredients to the bowl with the wet ingredients and mix.
TIP! If the batter is too thick, you can add more milk.
Pour the batter into a squeeze bottle. Lightly grease a pan with butter and heat it. Pour the batter onto the heated pan in a star shape, then connect the arms of the star together to form a spiderweb-like pancake. Once browned on one side, flip the pancakes and fry on the other side. Repeat the process for the remaining batter.
Serve the finished pancakes sprinkled with powdered sugar, drizzled with maple syrup, and topped with fruit.
