Ingredients:
- 1 1/2 cups large oats
- 1/2 cup peanut butter
- 1/3 cup honey
- 1/4 cup mini M&M’s
- 1/4 cup mini chocolate chips
- 1/2 teaspoon vanilla extract
Method:
In a large bowl, mix together the peanut butter, honey and vanilla extract until well combined.
Add the oats to the mixture and stir until the oats are completely coated in the peanut butter mixture.
Fold in the mini M&M’s and chocolate chips until they are evenly distributed throughout the mixture.
Chill the mixture in the fridge for 15-30 minutes to make it easier to handle.
Once cooled, use a spoon or cookie scoop to shape the mixture into small balls about 1 inch in diameter.
Place the Energy Balls on a baking sheet lined with greaseproof or wax paper.
Refrigerate the Energy Balls for a further 30 minutes to set before serving.
