Banoffee cake is sure to gain fans among both children and adults! A chocolate granola base and bananas in caramel – sounds delicious!
Ingredients
- banana – 5 pcs.
- sugar – 150 g
- powdered sugar – 2 tbsp
- butter – 100 g
- water – 50 ml
- lime – 1 pc.
- 30% cream – 450 ml
- chocolate granola – 250 g
Preparation
Step 1: Preparing the Cake Base Transfer the granola to a bowl and mix it with 60 g of butter. Evenly spread the granola on the bottom of a dish and gently press it down. Place it in an oven preheated to 180°C for 10 minutes. Set aside to cool.
Step 2: Preparing Bananas in Caramel Peel and slice the bananas into thick slices, then drizzle them with lime juice from half of the lime. Heat a pan, sprinkle a layer of sugar on the bottom – when it starts to melt, gradually add the rest. Once the caramel is ready, carefully add water. When everything is combined, add 40 g of butter. Stir until melted. Pour in 50 ml of cream. Pour a bit of the sauce into a small bowl. Place the bananas in the pan and fry for about 3-4 minutes, stirring occasionally.
Step 3: Layering Bananas on the Base Arrange the bananas on top of the granola base. Let it cool completely.
Step 4: Preparing the Cream Place the reserved sauce in the freezer for a while. Pour the well-chilled cream into a tall container. Beat until stiff and fluffy. Add powdered sugar and a few drops of lime juice. Beat again.
Step 5: Decorating the Cake Spread the cream over the cooled cake. Pour the chilled sauce into a piping bag and create decorative patterns on the surface of the cake. It’s worth chilling the cake before serving – about 30 minutes in the refrigerator.
