Artistic Cheesecake with Flowers

Ingredients

Transparent jelly

  • Strawberry jelly – 40 g
  • Water – 0.5 l
  • Gelatin – 2 tablespoons

Flower base

  • Food coloring – 1 piece
  • Coconut milk – 200 ml
  • Condensed milk – 100 ml
  • Water – 150 ml
  • Gelatin – 2 tablespoons

Background

  • Food coloring – 1 piece
  • Lemon jelly – 70 g
  • Water – 300 ml

Cheesecake

  • Strawberry jelly – 40 g
  • Water – 0.5 l
  • Vanilla cream cheese – 400 g

Preparation

Step 1: Prepare the Flower Base Soak the gelatin in water and set aside to swell. Then dissolve it in the microwave (about 30 seconds) or in a water bath.

Pour coconut milk and condensed milk (add as much condensed milk as desired sweetness) into a saucepan (1 liter). Place the saucepan over low heat and warm the base (do not boil!). Then add the dissolved gelatin and mix everything.

Step 2: Heat the Water Pour water into a large saucepan (about 1/3 of the pot’s capacity). Place the saucepan on the stove and heat the water.

Step 3: Prepare Colored Jellies Pour the previously prepared base into 6 glasses (fill about 1/2 of each glass). Then add 1 food coloring to each glass (a different one for each, e.g., green, blue, yellow, light blue) and mix well to dissolve the coloring. Place the glasses in the large pot with water at a temperature of about 30-35 degrees Celsius. The water in the pot must be kept warm to prevent the base from setting.

Additionally, pour hot water into a small bowl, which will be needed, for example, to soak a syringe or spoon.

Step 4: Prepare the “Tools” Load colored jelly into a syringe. Heat a small, rounded spoon for cutting in hot water. Place a white paper towel under the springform pan, which will serve as a temporary background.

Step 5: Create Decorative Flowers Using a small, rounded spoon, cut out a small depression in the jelly, into which you will inject colored jelly. Then insert a needle into the prepared depression and gently fill it with colored jelly to completely fill the center of the depression. Then use needles or special steel tools to make flowers.

Step 6: Pour the Background Prepare blue jelly in a bowl and after stirring, pour it gently over the prepared flowers in transparent jelly, covering the entire surface with a thin layer of blue jelly to create a background (pour only until the entire surface is covered with a thin layer). If bubbles appear on the surface, simply touch them gently with your finger to burst them. Place in the refrigerator and leave until the jelly sets (about 20 minutes).

Step 7: Make the Cheesecake Pour the strawberry jelly into hot water and mix. Gradually add vanilla cream cheese, mixing constantly. When the mixture is fluffy, pour it gently over the previously set jelly, filling the remaining part of the springform pan. Place in the refrigerator and wait until the cheesecake sets (about 30-40 minutes).

Step 8: Remove the Cake from the Springform Pan Gently outline the cake with a wooden stick to detach it from the edges of the springform pan. Then slowly immerse the form in hot water and keep it there for a while, making it easier to remove the cheesecake from the mold. Turn the springform pan over a plate and place it so that the jelly with flowers is on top. Gently remove the mold.
