Ingredients
- Low-fat cottage cheese – 270 g
- 1.5% milk – 90 ml
- Eggs – 2 pieces
- Wheat flour – 110 g
- Baking powder – 1 teaspoon
- Xylitol – 1 tablespoon
- Salt – 1 pinch
- Oil – 2 tablespoons
- Blueberries – 50 g
- Strawberries – 2 pieces
Preparation
In a blender container, add cottage cheese, milk, and egg yolks. Mix the ingredients using the cooking program according to your settings / time 20 seconds / speed 5. Then add flour, baking powder, xylitol, and salt and mix again, using the cooking program according to your settings / time 15 seconds / speed 4. Transfer the finished mixture to a bowl.
In a clean mixing bowl, place the egg whites. Attach the mixing attachment (called a butterfly) and beat the egg whites using the cooking program according to your settings / time 3 minutes / speed 4. Add the beaten egg whites to the cottage cheese mixture and gently mix everything.
Fry the pancakes in a small amount of oil for about 2-3 minutes on each side until they are golden brown. Serve the finished pancakes with blueberries and strawberries.
