Once you have made these cookies, you will never forget their taste or their appearance. They really do look like little loaves of bread!
Ingredients:
- 3 cups butter, softened
- 1 1/2 cups castor sugar, sifted
- 4 1/2 cups all purpose flour
- 1 1/2 cups cornstarch
- nonpareils and/or halved candied cherries (for decoration)
Method:
Preheat the oven to 150°C (300°F). Line baking sheets with baking paper.
In a large mixing bowl, cream together the softened butter and sifted icing sugar until light and fluffy.
In a separate bowl, whisk together the all-purpose flour and cornstarch until well combined.
Gradually add the flour mixture to the creamed butter and sugar, mixing on a low speed until the mixture forms a soft dough.
Using a pastry scoop or spoon, portion the dough and roll into balls. Place the balls on the prepared baking trays a few inches apart.
Flatten each ball slightly with the tines of a fork or, if desired, press a halved candied cherry into the centre. You can also sprinkle nonpareils on top for extra decoration.
Bake in the preheated oven for 18-20 minutes, or until the edges are lightly golden.
Remove from the oven and allow to cool on the baking sheet for a few minutes before transferring to wire racks to cool completely.
