Ingredients
Crust
- All-purpose flour, 250g
- Butter, 100g
- Sugar, 60g
- Egg, 1
- Egg yolks, 2
- Baking powder, 3.5g
- Salt, 1g
Filling
- Cherries, 200g
- White chocolate, 150g
- Heavy cream (36%), 100ml
- Powdered sugar, 50g
- Cornstarch, 30g
Additional
- All-purpose flour, 15g
- Butter, 15g
Preparation
Preheat the oven to 180°C. Grease a mazurek tin and dust with flour.
In a large bowl, mix together the flour, baking powder, and salt. Add the eggs and egg yolks to the bowl, followed by the butter. Mix everything thoroughly. Knead the dough and wrap it in plastic wrap, then refrigerate for about 30 minutes.
In a saucepan, heat the heavy cream to boiling, but do not let it boil. Finely chop the white chocolate. Add the chopped chocolate and powdered sugar to the warm cream and mix. Add the cornstarch to the mixture and mix again until smooth. Add drained cherries to the mixture and gently mix.
Remove the dough from the refrigerator, then divide it into two parts. Use the larger part for the base and the smaller one for decorative strips. Spread the base on the baking sheet and gently prick it with a fork. Spread the chocolate. Use the remaining dough to decorate the edges of the mazurek, creating a frame. Place the mazurek in the oven and bake for about 35 minutes.
After baking, let the cake cool. Place ready-made sugar decorations, such as eggs, leaves, pearls, on the finished mazurek. Then cut into pieces and serve to your loved ones.
