This unearthly feast, reminiscent of distant galaxies and cosmic wonders, combines the rich, velvety taste of chocolate with the soothing, creamy consistency of rice.
Ingredients
- white rice – 100 g
- coconut milk – 100 g
- xylitol – 2 tablespoons
- dark chocolate – 30 g
- vanilla – 1 pod
- strawberries – 100 g
- lemon juice – 1 tablespoon
- chocolate bar – 1 piece
Preparation
Cook white rice in water according to the package instructions. Set aside. Open a can of chilled coconut milk. Collect the cream from it (this is the solid part that should separate from the milk after chilling in the refrigerator).
In a saucepan, heat the coconut milk and xylitol. Stir until the xylitol dissolves. Add the dark chocolate and stir until melted and the mixture is smooth. Slice the vanilla pod lengthwise and scrape out the seeds. Add the vanilla seeds and cooked rice to the chocolate mixture and gently mix.
In a saucepan, heat the strawberries, xylitol, and lemon juice, stirring until the strawberries soften and turn into a puree. Blend if you want a smooth consistency.
In 2 bowls, place a layer of chocolate rice dessert. Then, on top of each serving, add a layer of fruit mousse. Slice the chocolate bar into slices and use them to decorate the dish.
