An incredibly charming bundt cake covered with marzipan and sweet decorations, hiding a surprise inside! Try your hand at making it and let it surprise not only the youngest ones this Easter.
Ingredients – cocoa cake
- Butter – 130 g
- Powdered sugar – 130 g
- Eggs – 2
- Vanilla extract – 1 teaspoon
- All-purpose flour – 100 g
- Baking powder – 1 teaspoon
- Cocoa powder – 40 g
Ingredients – light cake
- Eggs – 3
- Fine sugar – 190 g
- Cornstarch – 50 g
- Lemon paste – 5 g
- Grated lemon zest – 1 teaspoon
- All-purpose flour – 200 g
- Baking powder – 2 tablespoons
- Canola oil – 190 ml
Additionally
- Marzipan – 200 g
- Sugar decorations – 12 pieces
Preparation
Cream the butter with powdered sugar until light and fluffy. Then add eggs and vanilla extract. Mix everything well. Sift flour, cocoa powder, and baking powder into the prepared mixture.
Transfer the ready batter to a baking sheet lined with parchment paper and smooth its surface. Bake at 180°C for about 20-30 minutes or until a toothpick inserted into the cake comes out clean. Allow the baked cake to cool.
From the cooled cocoa cake, cut out shapes resembling bunny heads (all should be the same size and fit into the loaf pan). Then layer them on top of each other. Wrap the resulting tower of bunnies with plastic wrap and place it in the freezer while preparing the light cake.
Beat eggs with sugar for about 5-7 minutes until they become light and fluffy, and the sugar dissolves. Continue mixing and gradually pour in the oil while adding lemon paste. Then sift flour and cornstarch through a fine sieve into the mixture, add baking powder, and lemon zest. Mix the batter until all ingredients are well combined.
Pour a thin layer of the light cake batter into the bottom of a loaf pan lined with parchment paper. Then arrange the frozen cocoa bunny heads in the batter. Cover them with the remaining light cake batter. Bake the prepared bundt cake in an oven preheated to 170°C for about 50-60 minutes or until a toothpick inserted into the cake comes out clean. Allow the finished cake to cool.
Roll out the marzipan into a sheet similar in size to the cake and place it on top. Additionally, arrange sugar decorations on it.
