Ingredients
- Eggs: 2
- Sugar: 1 tablespoon
- Wheat flour: 2 tablespoons
- Heavy cream (36% fat): 200g
- Mascarpone cheese: 250g
- Powdered sugar: 2 tablespoons
- Raspberries: 50g
- Blueberries: 50g
Preparation
Separate the egg yolks from the whites. Beat the egg whites into stiff peaks, gradually adding a tablespoon of powdered sugar towards the end of beating. Then, reduce the mixer speed to the lowest and continuously beating, gradually add the egg yolks and flour.
On a baking sheet lined with parchment paper, use a spoon to scoop out disks about 10-12 cm in diameter. Bake the biscuits for about 9-10 minutes. Immediately after removing them, gently fold them in half and leave them on the baking sheet to cool.
In a bowl, place the heavy cream, mascarpone cheese, and powdered sugar. Mix the cream until the ingredients are well combined and the mixture is smooth.
Fill the cooled cookies to the brim with cream and decorate with fresh fruits.
