Try a yogurt cake with apricot, almond paste, and starfruit jelly!
Ingredients
Apricot Paste:
- Lemon – 1 piece
- Natural yogurt – 500 g
- Gelatin – 2 g
- Dried apricots – 150 g
Starfruit Jelly:
- Lemon jelly – 75 g
- Starfruit – 6 pieces
Almond Paste:
- Natural yogurt – 500 g
- Almond flakes – 100 g
- Gelatin – 2 g
- Xylitol – 1 tablespoon
Preparation
Step 1: Prepare the Apricot Paste Soak the apricots in lukewarm water for 1 hour. Place gelatin in a bowl, cover with cold water, and let it swell. Pour yogurt into a blender glass, add drained apricots, gelatin, and grated lemon zest. Blend the mixture. Pour the paste into a cake mold. Refrigerate until set.
Step 2: Prepare the Almond Paste Place gelatin in a bowl, cover with cold water, and let it swell. Blend yogurt with xylitol and gelatin. Add almond flakes and mix. Pour the mixture over the set apricot paste layer. Return to the refrigerator until set.
Step 3: Pour the Cake with Starfruit Jelly Prepare the lemon jelly according to the package instructions. Let it cool. Slice the starfruit and arrange on top of the almond paste layer. Pour the jelly over the cake. Refrigerate again for at least an hour. To remove the dessert from the mold, trim it with a knife close to the edge.
