- Buttermilk – 250 ml
- Oil – 2 tablespoons
- Baking powder – 1 teaspoon
- 30% cream – 125 g
- Lime – 2 pcs.
- Wheat flour – 200 g
Preparation
Step 1: Prepare the Waffle Batter Separate the egg whites from the yolks. Beat the egg whites into stiff peaks and refrigerate. Mix 75 g of butter with 100 g of sugar until a creamy mixture forms. Gradually add the egg yolks and buttermilk while constantly mixing. Add the combined flour and baking powder. Gently fold in the beaten egg whites. Cover the batter and let it rest for 30 minutes to thicken.
Step 2: Prepare the Lime Sauce Grate the zest of the lime and squeeze the juice. Dissolve the remaining sugar, lime juice, the rest of the butter, and lightly caramelize. Add the cream, simmer over low heat for about 3 minutes. Stir in the lime zest and set aside in a warm place.
Step 3: Bake the Waffles Bake rectangular waffles in a greased waffle iron. Serve with the sauce.
