Vegan peanut butter bars

Looking for a quick sweet snack? Here it is! These exceptional bars, which combine the sweet taste of maple syrup with peanut butter and coarse sea salt, will be perfect for this role.

Ingredients

  • Coconut oil – 3 tablespoons
  • Maple syrup – 2 tablespoons
  • Vanilla extract – 1 teaspoon
  • Salt – a pinch
  • Almond flour – 1.5 cups

Peanut butter filling

  • Peanut butter – 1 cup
  • Maple syrup – 0.5 cup
  • Salt – 0.25 teaspoon
  • Rice-coconut milk – 125 ml

Serving

  • Dark chocolate – 100 g
  • Sea salt
  • Rice-coconut milk – 45 ml

Preparation

In a bowl, place almond flour, coconut oil, maple syrup, vanilla extract, and salt. Mix all the ingredients thoroughly and transfer to the bottom of a baking pan lined with parchment paper. Press the dough firmly, smoothing its surface, and bake for about 10 minutes. Cool the ready almond crust.

In a saucepan, place peanut butter, maple syrup, rice-coconut milk, and salt. Heat the ingredients, stirring frequently, until the cream starts to boil. Pour the hot cream over the almond crust, cool it on the counter until it reaches room temperature. Then transfer the cake to the fridge and chill for about 30 minutes until the peanut butter cream sets.

Break the chocolate into pieces and melt it in rice-coconut milk in a water bath. Pour the still warm chocolate glaze over the layer of peanut butter cream and spread it evenly. Sprinkle the whole with a pinch of salt to taste.

Chill the finished bars in the freezer for about 30 minutes until the chocolate sets completely. Cut the bars into equal parts and serve as bars.
