Vegan peanut butter bars

Looking for a quick sweet snack? Here it is! These special bars, combining the sweet taste of maple syrup with peanut butter and coarse sea salt, are perfect for the job.

Ingredients – almond crust

  • Coconut oil: 3 tablespoons
  • Maple syrup: 2 tablespoons
  • Vanilla extract: 1 teaspoon
  • Salt: a pinch
  • Almond flour: 1.5 cups

Ingredients – peanut butter layer

  • Peanut butter: 1 cup
  • Maple syrup: 0.5 cup
  • Salt: 0.25 teaspoon
  • Rice-coconut milk: 125ml

Ingredients – serving

  • Dark chocolate: 100g
  • Sea salt
  • Rice-coconut milk: 45ml

Preparation

In a saucepan, combine peanut butter, maple syrup, rice-coconut milk, and salt. Heat the mixture, stirring frequently, until the peanut butter layer begins to boil. Pour the hot mixture onto the almond crust, cool it on the countertop until it reaches room temperature. Then transfer the bars to the refrigerator and chill for about 30 minutes until the peanut butter layer sets.

Break the chocolate into pieces and melt it in rice-coconut milk over a water bath. Pour the still warm chocolate glaze over the peanut butter layer and spread it evenly. Sprinkle with a pinch of salt to taste.

Chill the finished bars in the freezer for about 30 minutes until the chocolate sets completely. Cut the bars into even pieces and serve them as delicious peanut butter bars.
