Vegan Cranberry & Orange Cookies Recipe

Ingredients:

  • 85g flavourless oil (such as sunflower or vegetable)
  • 75g caster sugar
  • 75g light muscovado sugar
  • 1 tsp vanilla extract
  • Zest of 1 orange
  • 175g plain flour
  • 50g jumbo oats
  • ½ tsp baking powder
  • ½ tsp bicarbonate of soda
  • 1 tsp ground cinnamon
  • 75g dried cranberries, roughly chopped

Method:

Preheat your oven to 180°C (356°F). Line a baking sheet with parchment paper.

Mix together the oil, caster sugar, muscovado sugar, vanilla extract, and orange zest in a large bowl until well combined.

In a separate bowl, whisk together the flour, oats, baking powder, bicarbonate of soda, and cinnamon.

Gradually add the dry ingredients to the wet mixture, stirring until just combined.

Fold in the chopped cranberries.

Drop spoonfuls of the dough onto the prepared baking sheet, spacing them about 2 inches apart.

Bake for 12-15 minutes, or until the edges are golden and the cookies are set.

Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
