Perfectly creamy, homemade, and vegan ice cream with cherries! This is the best proposal for hot days – you can prepare it both with and without an ice cream maker!
Ingredients
- Brown sugar – 180 g
- Dark chocolate – 200 g
- Cherries – just under 1 cup
- Potato starch – 1 tablespoon
- Salt – a pinch
- Coconut milk – 800 g
Preparation
Chop the chocolate and place it in a large bowl. Pit the cherries and place them in a separate bowl. Mix ½ cup of coconut milk with 1 tablespoon of potato starch. Pour the rest of the coconut milk into a saucepan. Add sugar and salt. Bring to a boil, stirring constantly.
Add the prepared coconut milk and potato starch mixture to the saucepan. Bring to a boil again, stirring frequently (the mixture should thicken and resemble pudding).
Pour the hot pudding into the bowl with the chocolate. Let it sit for a minute, then vigorously stir until a smooth cream forms. Once the mixture has cooled, add the cherries. ransfer the mixture to an ice cream maker and churn, or pour it into a container and place it in the freezer, stirring every 30 minutes until the mixture sets.
