Vanilla Raspberry Parfait

A frozen treat perfect for summer heat! Check out the recipe for homemade vanilla ice cream with raspberry sauce and cigarillo biscuits.

Ingredients

Vanilla Cream

  • Vanilla sugar – 1 packet
  • Eggs – 3 pcs.
  • White chocolate – 100 g
  • Brown sugar – 40 g
  • Milk – 100 ml
  • Whipping cream (30%) – 200 g
  • Frozen raspberries – 100 g

Cigarillo Biscuits

  • Eggs – 5 pcs.
  • Powdered sugar – 50 g
  • Butter – 50 g
  • Cake flour – 50 g

Raspberry Sauce

  • Powdered sugar – 50 g
  • Frozen raspberries – 200 g

Preparation

Vanilla Cream

  1. Bring the milk to a boil. In a metal bowl, whisk the egg yolks with sugar. Place the bowl over a pot of simmering water. Add the boiled milk to the beaten egg yolks (if using a vanilla pod, split it and gently scrape out the seeds to be boiled in the milk). Whisk over steam until fluffy and creamy.
  2. Add the crushed white chocolate to the hot English cream and stir until the chocolate is completely melted. Let the English cream cool. Whip the cream and gently fold it into the cream mixture. Add fresh or frozen raspberries to the mixture and pour it into a container suitable for freezing parfait.

Cigarillo Biscuits

  1. Cream the softened butter with powdered sugar, then add the flour and egg white. Mix all ingredients thoroughly until smooth. Line a baking sheet with parchment paper. Using a spatula, form very thin strips of cigarillo dough and arrange them on the paper.
  2. Bake until golden, about 7-10 minutes at 190°C in a conventional oven or 180°C in a convection oven. After baking, quickly shape and set aside to cool.

Raspberry Sauce

  1. Blend the berries and powdered sugar.

Serving Serve the frozen dessert with raspberry sauce and crispy cigarillo biscuits.
