Try this dessert and you’ll be in seventh heaven. Vanilla millet pudding is something you must taste. It’s a perfect snack, second breakfast, or dessert after a delicious meal.
Ingredients
- Millet – ½ cup
- Milk (cow’s or plant-based) – 1 cup
- Apple juice – 1 cup
- Honey – 1 tablespoon
- Vanilla sugar (optional) – 1 teaspoon
For Serving
- Syrup: 1 tablespoon honey, juice of ½ lemon, and optionally seeds from ½ vanilla bean
- Apple – ½, cut into thin sticks or cubes
- Raisins (optional) – 2 teaspoons
- Chopped and toasted walnuts (optional) – as desired
Preparation
To prepare, rinse the millet under warm water in a sieve. Place it in a saucepan, add the milk, and cook over low heat with the lid on for about 15 minutes until the millet absorbs all the liquid.
Transfer the cooked millet to a blender, add the apple juice, honey, and optionally the vanilla sugar. Blend until smooth.
In a small bowl, mix the ingredients for the syrup: honey with lemon juice and, if desired, vanilla bean seeds.
Spoon the pudding into bowls, top with the apple pieces, and drizzle with the syrup. Optionally, sprinkle with raisins and toasted walnuts if using.
