Thai Black Sticky Rice Dessert

This recipe is a fantastic way to explore the rich flavours of Thai cuisine right in your own kitchen. It’s a perfect blend of sweet, creamy and fruity elements that come together to create a dessert that’s as beautiful to look at as it is to eat.

Ingredients:

  • 1 cup Thai black glutinous rice
  • 2 1/4 cups water
  • 3 tablespoons coconut milk
  • 2 tablespoons sugar
  • 1/3 cup condensed milk
  • 2 tablespoons milk
  • 1/4 teaspoon vanilla extract
  • 2 mangoes (peeled and diced, preferably golden if you can get your hands on some)
  • 1 cup ice (shaved)
  • Vanilla Ice Cream
  • 1 cup ice cream
  • 1 cup milk
  • 1/4 cup condensed milk
  • 1/4 teaspoon vanilla extract
  • Blueberry Ice Cream
  • 1 cup blueberries
  • 1/3 cup condensed milk
  • 2 tablespoons milk
  • 1/4 teaspoon vanilla extract
  • 2 mangoes (peeled and diced)
  • 1 cup ice (shaved)
  • Vanilla ice cream

Method:

Rinse 1 cup of Thai black sticky rice under cold water until the water runs clear.

Place the rinsed rice in a saucepan with 2 1/4 cups of water. Bring to the boil, then reduce the heat to low, cover and simmer for 45-50 minutes, or until the rice is tender and the water is absorbed.

In a separate saucepan, heat 3 tablespoons of the coconut milk with 2 tablespoons of the sugar, 1/3 cup of the condensed milk and 2 tablespoons of the milk over a low heat. Stir until the sugar is dissolved, then add 1/4 teaspoon vanilla extract.

When the rice is cooked, pour the warm coconut milk mixture over the rice and stir to combine. Leave to stand for about 30 minutes to allow the flavours to meld.

Serve the sticky rice with diced mango and a scoop of vanilla ice cream. You can also add shaved ice for a refreshing touch.

Blueberry Ice Cream Delight:

In a blender, combine 1 cup ice, 1 cup milk, 1/4 cup condensed milk and 1/4 teaspoon vanilla extract. Blend until smooth.

Add 1 cup blueberries and blend again until blueberries are well incorporated.

Serve in a bowl and top with more fresh blueberries, a drizzle of 1/3 cup condensed milk and a scoop of blueberry ice cream.

Garnish with diced mangos and shaved ice for an extra fruity flavor.
