Taste the rich, nutty flavours of the Lone Star State with Texas Pecan Pie, a dessert that’s as big-hearted as Texas itself. With its flaky crust, luscious filling and generous helping of pecans, this pie is a testament to simple, down-home goodness.
Ingredients:
- 1 1/4 cups chopped pecans
- 1 cup all purpose flour
- 1/3 cup shortening
- 1 cup plus 1 tablespoon light corn syrup
- 1 1/2 teaspoons vanilla extract
- 3 large eggs
- 1/4 teaspoon salt (plus a pinch more)
- 3 tablespoons cold water
- 1/2 cup plus 1 tablespoon of sugar
Method:
Preheat the oven to 350°F (175°C).
In a bowl, combine the flour and a pinch of salt; cut in the shortening until crumbly. Gradually add the cold water and knead with a fork until the mixture forms a ball.
Roll out the dough to fit a 9-inch pie plate. Transfer crust to pie plate. Trim crust to fit 1/2 inch over edge of plate; score edges.
Sprinkle chopped pecans over bottom of crust.
In a separate bowl, whisk together corn syrup, eggs, sugar, vanilla extract and 1/4 teaspoon salt until well blended.
Pour the mixture over the pecans in the crust.
Bake for 45-50 minutes or until a knife inserted in the centre comes out clean.
Cool on a rack before serving.
