Tennessee Peach Pudding

This delicious dish is a tribute to the sweet, juicy peaches that are the heart of Southern orchards. With every spoonful, you’ll savour the luscious fruit under a lightly spiced, golden-brown crust kissed by the warmth of cinnamon and nutmeg.

Ingredients:

  • 3 cups sliced, peeled fresh or frozen peaches
  • 1 cup all purpose flour
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/2 cup packed brown sugar
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup 2% milk
  • 1 tablespoon butter
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups water
  • Vanilla ice cream (optional, to serve)

Method:

Preheat the oven to 350°F (175°C).

Place the 3 cups of sliced peaches in a greased 9-inch square baking dish.

In a large bowl, combine 1 cup flour, 1/2 cup sugar, 2 teaspoons baking powder and 1/2 teaspoon salt. Add 1/2 cup milk and mix until smooth.

Pour the batter over the peaches in the baking dish.

In a small bowl, mix together 1/2 cup packaged brown sugar, 1/2 teaspoon cinnamon (if using) and 1/4 teaspoon nutmeg.

Sprinkle the brown sugar mixture over the dough.

Dot with 1 tablespoon of butter, then carefully pour 1 1/2 cups of water over the top.

Bake for 45-50 minutes or until the cake comes out clean.

Serve warm with a scoop of vanilla ice cream on top.
