The recipe combines the rich, buttery taste of caramel with the crunch of nuts and the chewiness of glacé cherries, all complemented by the zest of orange. After baking, they are finished with a smooth coating of dark chocolate, which not only adds an extra layer of indulgence, but also creates a beautiful contrast in flavour and texture.
Ingredients:
- 100g salted butter, chopped
- 100g brown sugar
- 100g golden syrup
- 2/3 cup (100g) plain flour
- 100g red glacé cherries, thinly sliced
- 1 1/2 cups (150g) flaked almonds
- 2/3 cup (100g) pistachios, finely chopped
- 2 teaspoons finely grated orange zest
- 360g dark (70%) chocolate, melted
Method:
Preheat the oven to 180°C (350°F) and line a baking tray with baking paper.
In a saucepan, melt the butter, brown sugar and golden syrup over a medium heat, stirring until smooth.
Remove from the heat and stir in the flour until well combined.
Add the sliced cherries, flaked almonds, chopped pistachios and orange zest, stirring until evenly distributed.
Drop tablespoonfuls of the mixture onto the prepared baking tray, leaving enough space to allow the mixture to spread.
Bake for 8-10 minutes or until golden and crisp.
Leave the florentines to cool on the baking tray for a few minutes before transferring them to a wire rack to cool completely.
When cooled, brush the flat side of each Florentine with melted chocolate.
Place them on a wire rack, chocolate side up, and allow the chocolate to set.
