Super Easy Jelly Cookies

These treats are like enchanted gems, each containing a secret burst of flavour – lime, raspberry and orange – like tiny portals to joy. Imagine them nestled on a moonlit plate, waiting for curious souls to take a bite and discover their sweet magic.

Ingredients:

  • 250g butter, softened
  • 1/4 cup caster sugar
  • 1 egg
  • 2 1/2 cups plain flour
  • 85g packet lime flavour jelly crystals
  • 85g packet raspberry flavour jelly crystals
  • 85g packet orange flavour jelly crystals
  • 1/4 cup boiling water

Method:

Using an electric mixer, beat the softened butter and caster sugar until pale and creamy.

Add the egg and beat until well combined.

Sift the plain flour into the butter mixture and beat until just combined.

Divide the mixture into three equal parts.

Put the lime, raspberry and orange jelly crystals in three separate bowls.

Working with one flavour at a time, add 1 tablespoon of boiling water to each bowl of jelly crystals. Whisk to combine (the crystals won’t dissolve completely).

Add a portion of the batter to each flavoured jelly mixture. Stir with a wooden spoon until well combined.

Shape each dough into an 18cm long log, using cling film to prevent sticking.

Freeze the logs for 30 minutes.

Preheat the oven to 180°C (160°C fan) and line three large baking trays with baking paper.

Remove one log from the freezer, cut into 1cm thick slices and roll each slice into a ball.

Place the balls 3cm apart on a prepared baking tray and press down lightly with the palm of your hand.

Repeat with the remaining rounds.

Bake for 12 minutes or until light golden.

Leave the cookies to cool on the trays for 5 minutes, then transfer to a wire rack to cool completely.
