Sugar-free rainbow popsicles

A recipe for delicious and refreshing unique popsicles without added sugar. Discover how easy it is to make this snack using only fresh fruits and vegetables.

Ingredients

  • Blackberries – 40 g
  • Honeydew Melon – 200 g
  • Apricots – 4 pieces
  • Lemon juice – 25 ml
  • Plums – 4 pieces
  • Baby Spinach – 25 g
  • Strawberries – 40 g

Preparation

Remove the stems from the strawberries, chop them into smaller pieces, and blend them into a smooth puree in a tall container. Pour the blended strawberries into popsicle molds, filling them to about ¼ of their height. Remove air bubbles from the puree by gently tapping the molds on the counter. Place the prepared strawberry popsicles in the freezer while you prepare the remaining purees to let the strawberry layer slightly firm up.

Peel and deseed the honeydew melon, chop it into smaller pieces, and transfer to a tall container. Add a handful of spinach and the lemon juice. Blend until smooth. Pour the prepared melon and spinach puree over the slightly frozen strawberry layer, filling the molds to about halfway. Gently tap the molds on the counter to remove air bubbles and return them to the freezer.

Pit the plums, chop them into smaller pieces, and transfer to a tall container. Add blackberries and blend until the mixture becomes smooth, and no skin fragments are visible. Pour the plum and blackberry puree over the remaining fruit layers in the molds, filling them to about ¾ of their height. Gently tap the molds on the counter. Return the popsicles to the freezer.

Remove the pits from the apricots, chop them into smaller pieces, and transfer to a tall container. Blend until smooth. Spoon the apricot puree into the molds, creating another fruity layer. Gently tap the molds on the counter and insert popsicle sticks, being careful not to let the purees leak. Freeze the popsicles for a minimum of 3 hours, preferably overnight.

Remove the popsicles from the freezer. Gently warm the molds in your hands to make it easier to remove the popsicles.
