Stracciatella Pancakes with Strawberries

You can also make pancakes from this popular recipe with a stracciatella twist.

Ingredients

Pancake Batter:

  • 130 g all-purpose flour
  • 325 ml milk
  • 2 eggs
  • 2 tbsp sugar
  • A small pinch of salt
  • 30 ml melted butter or oil

Filling:

  • 250 g ground cottage cheese (twaróg)
  • 4 tbsp thick sour cream (18% fat)
  • 1 tbsp vanilla sugar
  • 3 tbsp powdered sugar
  • 30 g grated or chopped chocolate (milk or dark)

Also:

  • About 250 g strawberries
  • Powdered sugar
  • Whipped cream

Preparation:

  1. Pancake Batter: In a bowl, combine flour, milk, eggs, sugar, and salt. Mix until smooth. Add melted butter or oil and mix again until well combined.
  2. Filling: Mix cottage cheese with sour cream, vanilla sugar, and powdered sugar. Then mix in the chopped chocolate.
  3. Heat a pancake pan and cook the pancakes.
  4. Spread each pancake with the filling and fold into triangles. You can warm them up before serving.
  5. Top with chopped strawberries and powdered sugar. Serve with whipped cream.
