Ingredients
Dry ingredients mix
- Powdered sugar – 0.25 slightly less than a cup
- All-purpose flour – 3 slightly less than a cup
- Baking powder – 2 tablespoons
- Gingerbread spice – 1 tablespoon
- Baking soda – 1 teaspoon
- Salt – 1 teaspoon
Spiced pancakes
- Egg – 1
- Butter – 1 tablespoon
- Seed mix – 1 slightly less than a cup
- Milk – 1 slightly less than a cup
- Canola oil – 1 tablespoon
To serve
- Butter – 1 tablespoon
- Maple syrup – 1 tablespoon
Instructions
Sift all the dry ingredients into a bowl and mix thoroughly. Transfer the mix to a glass jar. Melt the butter and let it cool slightly. In a bowl, combine 1 cup of the dry mix, milk, egg, and melted butter.
Grease a frying pan with oil and heat it. Pour the batter onto the pan to form 2-3 pancakes. Cook them over medium heat until golden brown. Transfer 3-4 pancakes to a plate and serve with a pat of butter and maple syrup to taste.
