Spiced pancakes

Fluffy and delicious pancakes infused with gingerbread spice. It’s hard to imagine a better sweet breakfast on a fall or winter morning.

Ingredients

Dry ingredients mix

  • Powdered sugar – 0.25 slightly less than a cup
  • All-purpose flour – 3 slightly less than a cup
  • Baking powder – 2 tablespoons
  • Gingerbread spice – 1 tablespoon
  • Baking soda – 1 teaspoon
  • Salt – 1 teaspoon

Spiced pancakes

  • Egg – 1
  • Butter – 1 tablespoon
  • Seed mix – 1 slightly less than a cup
  • Milk – 1 slightly less than a cup
  • Canola oil – 1 tablespoon

To serve

  • Butter – 1 tablespoon
  • Maple syrup – 1 tablespoon

Instructions

Sift all the dry ingredients into a bowl and mix thoroughly. Transfer the mix to a glass jar. Melt the butter and let it cool slightly. In a bowl, combine 1 cup of the dry mix, milk, egg, and melted butter.

Grease a frying pan with oil and heat it. Pour the batter onto the pan to form 2-3 pancakes. Cook them over medium heat until golden brown. Transfer 3-4 pancakes to a plate and serve with a pat of butter and maple syrup to taste.
