Indulge in the nostalgic flavours of a campfire favourite with these decadent S’mores Pancakes. Perfect for those who love the classic combination of chocolate, graham crackers and marshmallows, this recipe transforms ordinary pancakes into a delicious treat reminiscent of summertime campfires.
Ingredients:
Pancakes:
- 1 1/2 cups all-purpose flour
- 3 teaspoons baking powder
- 1 teaspoon salt
- 1 tablespoon granulated sugar
- 1 1/3 cups cold milk
- 1 cold egg
- 2 tablespoons butter, melted
S’mores toppings:
- 1 cup semi-sweet chocolate chips
- 1 tablespoon butter
- 1 sleeve graham crackers, crushed
- 1 jar marshmallow fluff or marshmallow creme
- 1/3 cup mini marshmallows (optional)
Method:
In a large bowl, whisk together the flour, baking soda, salt and sugar.
In a separate bowl, whisk together the cold milk, cold egg and melted butter.
Pour the wet ingredients into the dry and stir until just combined. It’s OK if there are a few lumps.
Heat a non-stick frying pan or griddle over a medium heat. Grease lightly with butter or cooking spray.
Drop about 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for a further 1-2 minutes until golden brown and cooked through. Repeat with the rest of the batter.
In a small saucepan or microwave-safe bowl, melt the semi-sweet chocolate chips and butter together until smooth and melted. Set aside.
Crumble the graham crackers.
If using, lightly heat the marshmallow fluff or marshmallow creme in the microwave to make it easier to drizzle over.
Stack the pancakes on individual plates.
Drizzle the melted chocolate over the pancakes.
Sprinkle the crumbled graham crackers on top.
Place dollops of marshmallow fluff or marshmallow cream on top of each pancake.
Sprinkle with mini marshmallows for extra s’mores flair.
Serve the s’mores pancakes warm to allow the toppings to melt slightly. Enjoy the gooey, chocolaty, marshmallowy goodness!
