- pancake mix, plus the ingredients listed on the box
- 1 teaspoon pure vanilla extract
- butter for the pan
- 6 strawberries, stems removed
- whipped cream
- powdered sugar, to serve
- maple syrup, to serve
Method:
Follow the instructions on the box of pancake mix to prepare the batter.
Stir 1 teaspoon pure vanilla extract into the batter for extra flavour.
Heat a large skillet or griddle over medium heat and lightly butter.
Drop the batter into the pan to make small to medium sized pancakes.
Cook until bubbles form on the surface of the pancakes and the edges look set, then flip and cook until golden brown on the other side.
Transfer the cooked pancakes to a plate and keep warm.
Place one pancake on a serving plate.
Place a strawberry, cut side down, in the centre of the pancake.
Place a small dollop of whipped topping on top of the strawberry to create the pom-pom of Santa’s hat.
Pipe or spoon a line of whipped topping around the base of the strawberry to complete the hat.
Dust the pancakes with icing sugar.
Serve with maple syrup on the side.
