Here’s a delicious recipe for Red Velvet Cookies, which combine the rich flavour of red velvet cake with the sweetness of white chocolate chips. These cookies are perfect for any occasion, whether it’s a holiday celebration or just a sweet treat for yourself.

Ingredients:

  • 1/2 cup butter (softened to room temperature)
  • 1 cup light brown sugar (sifted)
  • 1 large egg (whisked)
  • 1 1/2 teaspoons vanilla extract
  • 3/4 teaspoon red food colouring
  • 1 1/2 cups all-purpose flour (plus 1 tablespoon)
  • 3 tablespoons unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon (optional)
  • 2/3 cup white chocolate chips

Method:

Preheat the oven to 175°C (350°F). Line a baking sheet with baking paper.

In a large mixing bowl, cream together the softened butter and light brown sugar until light and fluffy.

Whisk in the beaten egg and vanilla extract until well combined.

Stir in the red food colouring. Adjust the amount to achieve the desired shade of red.

In a separate bowl, whisk together the all purpose flour, cocoa powder, baking powder, baking soda, salt and optional cinnamon.

Gradually add the dry ingredients to the wet, mixing until you have a soft cookie dough.

Fold in the white chocolate chips.

The cookie dough will be sticky. Chill in the fridge for about 30 minutes. Cooled dough is easier to work with.

Scoop out portions of the dough (about 1 1/2 tablespoons each) and roll into balls.

Place the balls on the prepared baking tray, leaving a space between each ball.

Flatten each ball slightly with the back of a fork or your fingers.

Bake for 10-12 minutes or until set and slightly firm.

Leave the cookies to cool for a few minutes on the baking sheet, then transfer to wire racks to cool completely.
