Raspberry granita is a dessert made from fruit puree or fruit pastes. Don’t confuse it with water ice; it’s much more intense and full of flavor! It’s perfect for hot days as a standalone dessert or an addition to another dish. Frozen raspberries provide a refreshing coolness that is very pleasant during heatwaves. Plus, granita is very easy and quick to prepare – it only takes 4 ingredients! Try it!
Ingredients:
- water: 1 cup
- sugar: 1 cup
- raspberries
- vanilla sugar
Preparation:
Step 1: Pour a cup of water into a saucepan and add a cup of sugar. Heat over medium heat until the sugar completely dissolves. It’s important not to stir the liquid while it’s cooking. Once the sugar and water come to a boil, cook for about 5 more minutes, then remove from heat and let it cool.
Step 2: Blend the raspberries with the vanilla sugar and the cooled sugar syrup until smooth. Pour the mixture into a large, shallow dish (e.g., a rectangular glass dish).
Step 3: Place in the freezer and every 30 minutes, scrape the frozen mixture from the sides of the dish with a fork (you can also use a pastry cutter). Eventually, you should have a granita with a texture similar to coarse ice. Serve in glasses with fresh raspberries and mint.
