Ingredients:
- 1 cup old-fashioned oatmeal
- 2 cups whole milk
- 1 cup water
- 1 cup pumpkin puree
- 1/4 cup brown sugar (to taste)
- 1 teaspoon pure vanilla extract
- 1 teaspoon pumpkin pie spice
- Pinch of kosher salt
- Toasted chopped pecans, to serve
- Maple syrup, to serve
Method:
Lightly grease the inside of your slow cooker with cooking spray or butter to prevent sticking.
In the slow cooker, combine the oatmeal, whole milk, water, pumpkin puree, brown sugar, vanilla extract, pumpkin pie spice and a pinch of kosher salt. Stir well to combine all the ingredients evenly.
Cover the slow cooker and cook on low for 6-8 hours or until the oats are tender and most of the liquid has been absorbed. If possible, stir the oatmeal occasionally during cooking.
When the oatmeal is cooked and creamy, serve warm. Portion the oatmeal into bowls and top each serving with toasted chopped pecans. Drizzle with maple syrup to taste.
