Delicious pumpkin muffins that are perfect all year round, though they truly shine in the fall season. This is when pumpkin season begins, accompanying Halloween. It is also an ideal recipe for any Harry Potter fan.
Ingredients
- All-purpose flour – 300 g
- Baking powder – 1 teaspoon
- Baking soda – 1 teaspoon
- Sugar – 170 g
- Orange zest (from 2 oranges) – 1 tablespoon
- Vanilla sugar – 2 tablespoons
- Eggs – 2
- Baked pumpkin puree – 200 g
- Milk – 60 ml
- Melted butter – 150 g
Optional
- Fresh or frozen cherries – as desired
- Powdered sugar – for dusting
Preparation
Preheat the oven to 190°C (375°F). Sift the flour into a bowl along with the baking powder and baking soda. Add the sugar, a pinch of salt, orange zest, and vanilla sugar. Mix and set aside.
In another bowl, whisk the eggs with the pumpkin puree. Add the melted butter and milk, and mix until combined.
Gently fold the wet ingredients into the dry ingredients using a spoon, mixing just until combined.
Spoon the batter into muffin liners and optionally place 3 cherries on top of each muffin. Bake in the preheated oven for about 18-20 minutes, or until a toothpick inserted into the center comes out clean. Dust with powdered sugar before serving.
