Protein Pancakes

These four-ingredient protein pancakes are a fantastic choice for a healthy, filling breakfast or snack. They’re incredibly easy to make, requiring just a few common ingredients and a little bit of your time.

Ingredients:

  • 1 large banana (should make about ⅓ – ½ cup when mashed)
  • 2 eggs
  • 1/8 tsp baking powder (optional, but recommended for fluffiness)
  • 2 tablespoons vanilla whey protein powder (optional; can be substituted with a dash of vanilla extract for flavour)

Method:

Peel and mash the banana in a bowl until smooth.

Crack the eggs into the bowl with the mashed banana.

Add the baking powder and vanilla whey protein powder (or vanilla extract).

Mix all the ingredients together until well combined.

Heat a non-stick frying pan over a medium heat and lightly grease with a little oil or butter.

Drop a scoop of batter onto the pan for each pancake.

Cook for 2-3 minutes on each side until bubbles form on the surface.

Flip the pancake and cook for a further 1-2 minutes on the other side until golden brown.

Serve the pancakes hot with your favourite topping such as fresh fruit, a drizzle of honey or a dollop of Greek yoghurt.
