Protein dessert

Here’s a delicious alternative to classic Italian tiramisu! This dessert tastes and looks like tiramisu but doesn’t require sugar and contains an extra portion of protein. Discover how easy it is to prepare.

Ingredients

  • egg – 1 piece
  • wholemeal spelt flour – 30 g
  • salt – a pinch
  • baking powder – 0.33 teaspoon
  • erythritol – 2 tablespoons
  • natural yogurt – 2 tablespoons
  • vanilla protein cheese – 200 g
  • low-fat cocoa – 1 teaspoon
  • coffee – 50 ml

Preparation

Brew the coffee early enough for it to cool down before preparing the dessert. Preheat the oven to 180°C.

Sift the flour, salt, and baking powder into a bowl. Mix erythritol into powder. Whip the egg white until stiff, adding a tablespoon of erythritol towards the end. In another bowl, beat the egg yolk with a tablespoon of sweetener and yogurt.

Add the sifted dry ingredients to the beaten egg yolk mixture and mix thoroughly. Then add the whipped egg whites and gently fold them into the batter. Transfer the batter to a parchment-lined springform pan and bake for about 20–25 minutes. Cool the baked sponge and divide it into two layers.

Whip the vanilla cheese until fluffy.

Cut circles from the sponge with the diameter of the serving dish. Spread ⅓ of the cream on the bottom and place a piece of sponge on top. Then drizzle the cake with coffee and dust with cocoa. Continue layering in this manner until the dessert almost reaches the rim of the dish. The top layer should be the cream, dusted with cocoa.

The dessert tastes best when chilled.
