Peanut Butter Protein Balls

Are you having a party tonight and have forgotten to prepare sweet snacks for your guests? Peanut Butter Protein Balls are sure to please! It’s also a very healthy recipe!

Ingredients:

  • 1 cup old-fashioned oats
  • 1/2 cup peanut butter (creamy or crunchy)
  • 1/4 cup honey or maple syrup
  • 1/4 cup chocolate chips (optional)
  • 1/4 cup ground flax seeds (optional)
  • 1 scoop (about 1/4 cup) vanilla protein powder
  • 1 teaspoon vanilla extract
  • pinch of salt

Method:

In a large mixing bowl, combine the oats, peanut butter, honey or maple syrup, chocolate chips (if using), ground flaxseed (if using), vanilla protein powder, vanilla extract and a pinch of salt.

Stir until well combined. If the mixture is too dry, you can add a little more honey or maple syrup to help it stick together.

When the mixture is well combined and holds together easily, use your hands to roll it into small balls about 1 inch in diameter.

Place the balls on a baking sheet lined with greaseproof paper.

Refrigerate the peanut butter protein balls for at least 30 minutes or until set.

Once set, transfer the protein balls to an airtight container and refrigerate for up to one week.
