Plum Tiramisu

Try the original recipe for tiramisu in a completely new version – with plums, cottage cheese, and ladyfingers!

Ingredients

  • Brown sugar – 120 g
  • Vanilla sugar – 1 packet
  • Lemon – 0.5 pc.
  • Flaked almonds – 2 tablespoons
  • Plums – 500 g
  • Low-fat cottage cheese – 500 g
  • Red wine – 50 ml
  • Amaretto liqueur – 2 tablespoons
  • 30% cream – 100 g
  • Ladyfingers – 100 g

Preparation

Step 1: Prepare the Plums Wash the plums, cut them in half, remove the pits, and slice the flesh. Cook with red wine and 60 g of sugar for about 5 minutes. Scald the lemon, grate the zest on a grater or using a zester, and squeeze the juice. Add lemon zest, 1-2 teaspoons of juice, and amaretto to the plums – chill.

Step 2: Mix the Cheese Mixture Mix cottage cheese with the remaining sugar and vanilla sugar. Whip the cream until stiff peaks form and add it to the mixture, stirring.

Step 3: Arrange the Tiramisu Arrange the ladyfingers in a rectangular dish, cover with plums, and drizzle with sauce. Spread the cheese mixture. Cover the tiramisu and refrigerate for at least 1 hour.

Toast the flaked almonds in a dry pan without adding fat, then let them cool. Sprinkle the tiramisu with them before serving.
