Ingredients

  • All-purpose flour: 220g
  • Plain yogurt: 200g
  • Pistachios: 100g
  • Sugar: 100g
  • Oil: 160g
  • Fresh spinach: 60g
  • Eggs: 2
  • Baking powder: 8g
  • Baking soda: 3g
  • Salt: 2g
  • Vanilla extract: 2g

Additionally

  • All-purpose flour: 10g
  • Sugar: 20g
  • Oil: 20g

Preparation

In one bowl, mix the dry ingredients: flour, baking powder, baking soda, and salt. In another bowl, beat eggs with sugar using a mixer. Then add yogurt and vanilla extract, and mix everything thoroughly. Once you have a smooth egg mixture with yogurt and vanilla extract, slowly add it to the dry ingredients. Gently mix using a whisk.

Blend pistachios with spinach and 30g of oil until you get a smooth paste. Add the paste to the muffin batter and gently mix. Transfer the mixture into muffin molds greased with oil and lightly dusted with flour. Sprinkle sugar on top of each muffin.

Place the muffin tray in an oven preheated to 170°C and bake for about 20-25 minutes. After baking, remove them from the tray and let them cool on a wire rack. Serve with your favorite toppings or enjoy them on their own!
