Ingredients

  • unsalted pistachios – 1 cup
  • full-fat milk – 2 cups
  • heavy cream (36% fat) – 1 cup
  • cup sugar – 3/4 cup
  • vanilla extract – 1 teaspoon
  • salt – a pinch

Preparation

Grind the pistachios into a fine powder using a blender or coffee grinder. You can leave a few larger pieces for texture if desired.

In a small saucepan, heat the milk with the ground pistachios until it begins to steam, but do not let it boil. Strain the mixture through a sieve into a large bowl to remove any larger pieces of pistachios. Add the heavy cream and vanilla extract, and mix well.

Cover and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld. Transfer the prepared ice cream mixture into a container and freeze it in the freezer for several hours until the ice cream is thoroughly set.
