Pineapple Upside Down Cake

This is a simple and easy dessert that takes just five ingredients and 15 minutes to prepare. With juicy chunks of pineapple, a caramelised brown sugar topping and the convenience of a cake mix, this delicious treat is perfect for any occasion.

Ingredients:

  • 3/4 cup butter, divided
  • 2/3 cup packaged brown sugar
  • 1 jar (6 oz) maraschino cherries, drained
  • 1/2 cup chopped pecans, toasted
  • 1 20 oz. can unsweetened pineapple tidbits or crushed pineapple (undrained)
  • 1 box yellow cake mix (regular size)
  • vanilla ice cream (optional)

Method:

Preheat the oven to 175°C (350°F).

Melt 1/2 cup of the butter and stir in the brown sugar.

Spread this mixture evenly over the bottom of a greased 9×13 inch baking pan.

Arrange the drained maraschino cherries and chopped pecans on top of the brown sugar layer.

Top with undrained pineapple chunks or crushed pineapple.

Sprinkle the dry yellow cake mix evenly over the top.

Drizzle the remaining melted butter over the cake.

Bake for 50-60 minutes until the top has a nice crust.

Leave to cool on a wire rack.

Serve with whipped cream or vanilla ice cream.
