Ingredients:
- 200g (1 1/3 cups) self-raising flour
- 2 tablespoons caster sugar
- 3 eggs, beaten
- 180ml (3/4 cup) milk
- 1 teaspoon vanilla extract
- 40g butter, melted and cooled, plus extra for greasing and serving
- 240g fresh or thawed frozen mixed berries, plus extra fresh berries to serve (optional)
- Maple syrup, to serve
Method:
In a large mixing bowl, sift together the self-raising flour and caster sugar.
In a separate bowl, whisk together the eggs, milk and vanilla extract.
Make a well in the centre of the dry ingredients and pour in the egg mixture, stirring gently to combine.
Add the melted butter to the mixture and fold in until just mixed.
Gently fold in the 240g of mixed berries.
Preheat your pie maker according to the manufacturer’s instructions. Grease the pie maker with a little extra melted butter.
Once the pie maker is heated, pour the pancake batter into each hole, taking care not to overfill.
Close the lid and cook for about 5-7 minutes or until the pancakes are golden and cooked through.
Carefully remove the pancakes from the pie maker and serve warm with extra berries and a generous drizzle of maple syrup.
