Perfect for a luxurious dessert or a sweet snack, these bonbons are a gourmet twist on classic ice cream flavours.
Ingredients:
- 2 cups finely chopped roasted pecans
- 1 quart vanilla ice cream (or flavour of choice)
- 2 cups semi-sweet chocolate chips
- 1/2 cup butter, cubed
- 1 tablespoon instant coffee grounds
Method:
Line a 15x10x1 inch baking pan with waxed paper and place in the freezer to chill.
Place the chopped pecans in a shallow bowl.
Using a melon baller, quickly scoop the ice cream into 3/4-inch balls, then immediately roll them in the pecans. Place the coated balls on the prepared tray and freeze for at least 1 hour or until firm.
In a microwave-safe bowl, melt the chocolate chips and butter, stirring until smooth. Stir in the coffee granules until dissolved and allow to cool completely.
Working quickly and in batches, use a toothpick to dip the ice cream balls into the chocolate mixture, allowing any excess to drip off. Place the bonbons on a tray lined with waxed paper and remove the toothpicks.
Return the bonbons to the freezer and freeze until set. For longer storage, place the bonbons in a covered freezer container.
