Pear-raspberry dessert

Prepare a refreshing fruity jelly and pear mousse dessert perfect for hot days!

Ingredients

Raspberry jelly

  • Powdered sugar – 50 g
  • Frozen raspberries – 250 g
  • Water – 20 ml
  • Gelatin – 10 g

Pear mousse

  • Pears – 4 pieces
  • Powdered sugar – 90 g
  • Mascarpone cheese – 250 g
  • 30% cream – 400 g
  • Water – 25 ml
  • Gelatin – 8 g

Fruit for decoration

  • Blueberries – 50 g
  • Pear – 1 piece

Preparation

Soak the gelatin in water until it swells, then dissolve it in the microwave or in a water bath. Blend the raspberries, add sugar and the dissolved gelatin (add gelatin gradually, check our trick). Pour 3/4 of the jelly into glasses and chill for 45 minutes in the refrigerator (use the remaining jelly to finish the dessert).

Wash, peel, and remove the seeds from the pears. Blend 2 pears, and finely dice the remaining 2. Whip the cream and mix with mascarpone, powdered sugar, and pear puree. Soak the gelatin in water, then dissolve it in the microwave or in a water bath and add it to the mixture. Add the diced pears. Transfer the mousse to glasses and chill in the refrigerator for 20 minutes. Pour the remaining raspberry jelly (1/4) over the dessert and chill again.

Decorate the top of the desserts with pear slices and fresh blueberries.
