Peanut Butter Snowballs

These bite-sized treats are the perfect combination of creamy peanut butter and sweet icing sugar, all wrapped in a velvety white candy coating. They’re so easy to make, yet so irresistibly delicious, they’ll be the life of the party.

Ingredients:

  • 1/2 cup creamy peanut butter
  • 1 cup powdered sugar
  • 1 pound white candy coating, coarsely chopped
  • 3 tablespoons butter, softened
  • Finely chopped peanuts (optional)

Method:

In a mixing bowl, combine the peanut butter, powdered sugar and softened butter. Mix until well blended.

Shape the mixture into 1-inch balls and place on a baking sheet lined with wax paper.

Chill the peanut butter balls in the fridge for about 30 minutes to set.

Melt the white chocolate coating in a double boiler or microwave, stirring frequently, until smooth.

Using a fork, dip each peanut butter ball into the melted icing to completely coat, then tap off any excess.

If using, immediately sprinkle the finely chopped peanuts over the coated balls.

Place the coated balls back on the waxed paper and allow to set until the coating is hard.
