Ingredients
- Peaches – 2 pcs.
- Wheat flour – 1.5 cups
- Almond flour – 110 g
- Ground flaxseed – 35 g
- Almond milk – 230 ml
- Apple cider vinegar – 1 tablespoon
- Grapeseed oil – 65 ml
- Baking powder – 1.5 teaspoons
- Baking soda – 1 teaspoon
- Agave syrup – 125 ml
Topping
- Peaches – 3 pcs.
- Powdered sugar – 5 g
- Flaked almonds – 2 tablespoons
Preparation
In a large bowl, combine wheat flour, almond flour, ground flaxseed, baking powder, and baking soda – mix all the ingredients together. In another bowl, combine maple syrup, almond milk, oil, and apple cider vinegar. Mix well.
Dice the unpeeled peaches. Add the dry ingredients to the wet ones and mix with a kitchen whisk. Add the diced peaches to the batter and mix again. Transfer the batter to a baking pan lined with parchment paper. Arrange peach slices on top. Sprinkle with flaked almonds. Bake in an oven preheated to 180°C for about 45 minutes (or until a toothpick inserted into the center comes out clean).
Optionally, dust the cake with powdered sugar before serving.
