Pancakes in beer sauce

A slightly less sweet variation of the famous crêpes suzette. An incredibly aromatic sauce using APA beer, apple, and honey is sure to please many palates!

Ingredients

Pancakes

  • Wheat flour, 1 cup
  • Milk, 1 cup
  • Water, 0.65 cup
  • Eggs, 2
  • Butter, 50 g
  • Sunflower oil, 3 tablespoons
  • Salt, a pinch

Beer sauce

  • Ale beer, 250 ml
  • Butter, 100 g
  • Honey, 2 tablespoons
  • Apple, 1
  • Lime, 1

Preparation

Mix milk and water thoroughly with eggs. Melt butter and add it along with flour to the batter. Mix everything very thoroughly. Fry very thin pancakes on a heated pan. Fold each pancake into quarters, forming a „handkerchief.” Heat honey in a pan. Then add beer and cook until about 2/3 of the liquid evaporates.

Cut cold butter into cubes, grate the zest from half of the lime. Add these prepared ingredients to the pan and stir occasionally until the sauce slightly thickens. Then season to taste with lime juice.

Remove the core from the apple and cut it into small cubes. Add them to the sauce and heat until boiling. Arrange the pancakes on the pan so that they are submerged in the sauce. Turn them regularly until they are warm and coated with the evaporated sauce. Transfer the pancakes to a plate and serve them while still warm, with your favorite toppings.
