Vegan Pancakes

Surprise your friends with a delicious vegan dish! Use soy or almond milk instead of regular milk. The taste will be unique.

Ingredients:

  • 1 cup all purpose flour
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • 1/8 teaspoon salt
  • 1 cup non-dairy milk (such as almond or soy milk)
  • 2 tablespoons vegetable oil (plus extra for cooking)
  • 1 teaspoon vanilla extract

Method:

In a mixing bowl, whisk together the flour, sugar, baking powder and salt.

In a separate bowl, mix together the dairy-free milk, vegetable oil and vanilla extract.

Pour the wet ingredients into the dry and stir until just combined. Take care not to overmix; the dough should be slightly lumpy.

Heat a lightly oiled frying pan or griddle over medium heat.

Pour about 1/4 cup of the batter into the pan for each pancake.

Cook until bubbles form on the surface and the edges start to set, about 2-3 minutes.

Flip the pancakes and cook on the other side for a further 1-2 minutes until golden brown.

Repeat with the rest of the batter, greasing the pan as necessary between batches.

Serve warm with your choice of toppings such as maple syrup, fresh fruit or vegan butter.
