German pancakes, often called Dutch baby pancakes, are baked pancakes made from eggs, milk, flour and vanilla. They puff up in the oven and fall down when they cool.
Ingredients:
- 6 large eggs
- 1 cup of milk
- 1 cup all purpose flour
- A pinch of salt
- 1 teaspoon vanilla extract
- 5 tablespoons butter
Method:
Preheat the oven to 425°F (220°C).
Place the butter in an ungreased 9×13 inch metal baking pan and melt in the preheated oven.
Place the eggs, milk, flour, salt and vanilla in a mixer. Blend until smooth.
Pour the mixture into the baking tin on top of the melted butter.
Bake for 22-27 minutes or until the edges are golden brown and puffed up.
Serve warm with a generous sprinkling of icing sugar and syrup.
