Orange Churros with Spicy Sauce

Delicious, fluffy churros with a hint of orange, served with a chocolate chili sauce. The chili-infused chocolate perfectly complements and enhances its flavor. Dip the churros in the sauce and savor every bite. They will disappear from the plate in no time.

Ingredients

Dough:

  • All-purpose flour: 1 cup
  • Eggs: 3
  • Fine sea salt: a pinch
  • Unsalted butter (82% fat): 50 grams
  • Brown sugar: 1 tablespoon
  • Water: 240 milliliters
  • Orange zest: 1 teaspoon

Coating:

  • Dark chocolate: 50 grams
  • Heavy cream: 1 tablespoon
  • Whole milk (3.2% fat): 125 milliliters
  • Orange zest: 0.5 teaspoon
  • Chili powder: a pinch

Others:

  • Canola oil: 1 liter
  • Powdered sugar: 1 tablespoon

Preparation

Churros:

  1. In a saucepan, bring water to a simmer, add salt, orange zest, sugar, and butter. Cook over low heat until the sugar dissolves. Add the flour to the hot mixture and stir vigorously with a wooden spoon while heating. When the dough starts to come away from the sides of the saucepan and becomes glossy, remove from heat and let it cool.
  2. Once cooled, add one egg at a time to the dough, mixing well with a mixer after each addition. I prepared the dough a day in advance and refrigerated it. Transfer the dough to a pastry bag fitted with a star tip. Heat the canola oil in a deep frying pan to 170 degrees Celsius. Drop a piece of bread into the oil and observe if it browns after a minute. Pipe the dough directly into the oil using the pastry bag. Churros will expand during frying, so fry only 4 pieces at a time for about two minutes on each side. Adjust the flame as needed while frying. Remove using a slotted spoon and place on a paper towel to drain excess oil.

Sauce:

  1. Break the chocolate into pieces and add butter, chili powder, orange zest, and cream. Heat over low heat until melted. Remove from heat; the sauce will thicken as it cools. Serve the churros with the sauce and dust with powdered sugar.

Candied Orange Zest:

  1. Wash and blanch the oranges, then grate them using the finest grater holes. Sprinkle with sugar and store in a jar in the refrigerator. It will be ready the next day. Store it in the refrigerator for several months. Use the zest of one orange and one tablespoon of sugar.
