Quick breakfast muffins made with oats – just mix the ingredients and bake.
Ingredients:
- 1 cup (110 g) rolled oats
- 1 banana
- 1 egg
- 1/2 cup (125 ml) milk (any type: cow’s milk, plant-based)
- 1 tablespoon vanilla sugar (or 1 teaspoon vanilla extract)
- 1 teaspoon baking soda
- a pinch of salt
- 1 tablespoon peanut butter
- 2 tablespoons honey or maple syrup
- 2 tablespoons chocolate chips or chopped chocolate
- coconut oil or butter for greasing muffin tin
Preparation:
- Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit).
- In a food processor (mini chopper or blender), combine all ingredients except chocolate chips until smooth. You can also use a stand blender or immersion blender.
- Grease muffin tin cups with coconut oil or butter. Divide the batter evenly into the muffin cups.
- Sprinkle chocolate chips or chopped chocolate on top of each muffin.
- Bake for about 20 minutes, until the muffins are golden brown and a toothpick inserted into the center comes out clean.
