Oatmeal Banana Peanut Butter Muffins

Quick breakfast muffins made with oats – just mix the ingredients and bake.

Ingredients:

  • 1 cup (110 g) rolled oats
  • 1 banana
  • 1 egg
  • 1/2 cup (125 ml) milk (any type: cow’s milk, plant-based)
  • 1 tablespoon vanilla sugar (or 1 teaspoon vanilla extract)
  • 1 teaspoon baking soda
  • a pinch of salt
  • 1 tablespoon peanut butter
  • 2 tablespoons honey or maple syrup
  • 2 tablespoons chocolate chips or chopped chocolate
  • coconut oil or butter for greasing muffin tin

Preparation:

  1. Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit).
  2. In a food processor (mini chopper or blender), combine all ingredients except chocolate chips until smooth. You can also use a stand blender or immersion blender.
  3. Grease muffin tin cups with coconut oil or butter. Divide the batter evenly into the muffin cups.
  4. Sprinkle chocolate chips or chopped chocolate on top of each muffin.
  5. Bake for about 20 minutes, until the muffins are golden brown and a toothpick inserted into the center comes out clean.

Enjoy these oatmeal banana peanut butter muffins warm or at room temperature!
