Combining the tangy zest of fresh limes with the creamy richness of cream cheese and condensed milk, this ice cream pays homage to classic Key Lime Pie. Without the need for an ice cream maker, you can easily whip up this frozen treat and enjoy the taste of the tropics in your own home.
Ingredients:
- 1 packaged tablespoon of finely grated lime zest from about 3 limes
- 1/4 cup packaged dark brown sugar
- 1 cup graham cracker crumbs, from 8 whole crackers
- 6 tablespoons fresh lime juice, from about 3 limes
- 4 tablespoons unsalted butter, melted
- 1 (8-ounce) package cream cheese, softened
- 1 (14-ounce) can sweetened condensed milk
- 1/4 cup heavy cream
- Pinch of salt
Method:
Make the crust mixture: In a bowl, mix together the graham cracker crumbs, dark brown sugar, melted butter and a pinch of salt until well combined. Set aside.
Make the ice cream base: In a large bowl, beat the cream cheese until smooth. Add the sweetened condensed milk, lime zest and lime juice and continue to beat until fully incorporated.
Whip the cream: In a separate bowl, whip the heavy cream until stiff peaks form.
Fold in the whipped cream: Gently fold the whipped cream into the cream cheese mixture until well blended.
Layer and freeze: Pour half of the ice cream base into a loaf tin. Sprinkle half of the crust mixture on top. Repeat with the remaining ice cream base and crust mixture. Use a knife to gently toss the layers together.
Freeze: Cover the pan with cling film and freeze for at least 6 hours or until firm.
